At the foothills of the northern Catskill Mountains, Vietnam veteran Bill Haley built his very own sugar shack, where he boils down over 7,000 gallons of maple sap each season to create the most delicious, 100% pure, organically grown maple syrup we’ve ever tasted.

At 78 years old, Bill still does it all himself—firing up the blazing wood stove in his charming little cabin, dressed in his signature workwear and a big smile. His syrup is not just sweet—it’s soulful.

This is our favorite maple syrup, and we use it every day. We stir it into coffee, drizzle it over granola, yogurt, and fruit, and even brush it onto salmon with a touch of soy sauce for an unforgettable glaze.
